Slimming World Sunday - Veggie Quiche


If you read my EESP post from last week, you'll know that one of my favourite lunches recently has been quiche. It's really simple and cheap to make, plus it's really filling too. The particular recipe that I use is great if you are following the SP plan like I was - just serve it with a salad and you've got the perfect SP lunch, but is great served with other free foods for an extra easy lunch, or simply on it's own as a snack.


Like I said the recipe is really simple. It takes no more than five minutes to prepare, then just 30 minutes in the oven. It tastes good served either hot or cold, so it's the perfect dish to prepare in advance if you wanted to take it to work with you the next day (which is what I often do).

Cut up whatever veggies you want to put in into small pieces - I usually go for cherry tomatoes, mushrooms and peppers. You could even throw in small pieces of bacon if you wanted some meat in the dish, frying them for a few minutes first. Once all of your veggies are chopped, place them into a flan dish, making sure all of the pieces are evenly spread throughout the dish.

Then, mix a 300g tub of low fat (or ideally fat free) cottage cheese with 5 beaten eggs, and pour the mixture evenly over the veggies in the dish. Place the dish into the oven at 170 degrees (for fan assisted ovens) and leave to cook for 25-30 minutes.

Your quiche is then ready to serve, or you can leave it to cool before popping in the fridge to eat at a later date. The quiche should keep in the fridge for about three days.
