Slimming World Brownies
As a Valentine's treat to ourselves, my husband and I baked a batch of brownies at the weekend. With both of us still being on a mission to lose some weight before my sister's summer wedding, we thought we'd better behave ourselves a little and made the Slimming World friendly version, which was really easy and affordable to do.
The ingredients for the recipe are:
low calorie cooking spray (eg Frylight)
6 eggs, separated
70g sweetener
60g cocoa powder
1 tsp vanilla essence
If you also want to make the frosting (which I would recommend, they can be a little dry without), then the only extra ingredients you will need are a tub of quark and an Options hot chocolate sachet.
First off you will need to preheat your oven to 180 degrees, line a baking tray with greaseproof paper and spray with Frylight,
In a bowl, whisk together the egg whites until the form soft peaks. In a separate bowl, whisk together the yolks, sweetener, cocoa powder & vanilla until fully mixed (you may need to add a splash of water to the mixture at this point).
Fold the egg whites into the chocolate mixture and then pour into the baking tray and bake for 25-30 minutes.
If you wish to add frosting too, simply mix the quark and Options powder together and spread on top of the brownies once they have cooled.
It's not quite the same as brownies, they definitely have a different texture to them, but they do satisfy a sweet tooth, and the frosting is delicious. This mixture, if you have a baking tray large enough, should make around 25 brownies, which, if you're following the Slimming World plan, works out at 1/2 syn each. Adding the frosting doesn't make that much of a difference, as the mix in total comes to 2 syns, so spreading that over 25 brownies does minimal damage, but you could count them as a syn each to be safe.
